Kim Lofgren and Shannon Tortolano are two women with a shared passion — live fermented beverages. They joined together in the winter of 2014 to create One Breath Beverage, the first start-up craft brewery of kombucha and kefir water in Hood River.
Kombucha, the bubbly, fermented beverage made from tea, has been enjoying a surge of popularity for a few years now, due in part to its health benefits. Because it’s naturally fermented with a living colony of bacteria and yeast, kombucha is a live probiotic beverage. In addition to the health benefits of probiotics, kombucha is much lower in sugar and calories than other sweet drinks. It’s pretty delicious too! The pristine spring water, abundant local organic produce, and an amazing community have made Hood River an outstanding place to brew these nourishing probiotic beverages.
One Breath is on tap at The Good Medicine Lounge, Farm Stand the Gorge, Mothers Marketplace, Doppio Coffee, Ground, Kickstand Coffee Kitchen, Growlerz, Spoke & Sail Cider and at the Gorge Grown Farmers market. These two are poised to put this organic, tasty bubbly into bottles.
In order to get the bottling operation underway and move into distribution, One Breath needs capital. They are running a Kickstarter through Feb. 29. They have already raised $8,000, but will receive nothing unless they meet their goal of $20,000.
One Breath will start bottling with their four most popular flavors, Be Love (rose + peach), Be Here (ginger + juniper), Be Still (lavender + pear), and Be Wild (hibiscus + blueberry).
“The Gorge is known for its amazing wine, beer, cider and spirits. One Breath would like to add kombucha and kefir water to the list,” Tortolano said.
