Oregon Craft Beer rolls out another Zwickelmania, a chance to get an inside look at breweries, on Feb. 13 from 11 a.m. to 4 p.m. at 120 or more breweries around the state, including four in the Gorge: pFriem Family Brewers, Thunder Island in Cascade Locks, Double Mountain Brewery, and Full Sail Brewery, which will present its new Bourbon Barrel Aged Wheatwine Ale, paired with Moonstruck Chocolate Beer Berries.

Slipknot IPA makes a 12-year return
Full Sail Brewing Company is releasing an old favorite from its Brewmaster Reserve series, Slipknot IPA. The beer features a big Northwest hop aroma and robust bitterness balanced with a full malt body.
“Slipknot leads with aromas of citrus, pine and stone fruit,” said Executive Brewmaster Jamie Emmerson. “Balanced by a clean, caramel malt body, Slipknot’s multi-layered hop flavors lead to a crisp, assertive finish. Slipknot is, once again, the beer for the serious hop lover.”
Every aspect of this IPA is amplified — from the upfront hop aroma and bitterness to the big malt body.
“Brewed originally in 2004, Slipknot makes are rare reappearance updated with new hop varieties and a dryer malt profile,” said Full Sail Brewmaster Jim Kelter. “2-Row Northwest Pale and Caramel malts provide the right amount of malt character to support a wonderfully hoppy surplus of Cascade, Mosaic and Citra hops. Extensive dry-hopping enhances the aroma and late hop flavors.”

Sedition Brewery nears opening day
The Sedition Brewery glasses will say it: “100 years in the making.” It was January 1916 that the old Columbia Brewery stopped making beer in The Dalles.
Craft brewing is back in The Dalles as two new breweries have opened this year. Sedition Brewery, set to open in mid- to late-February, follows Freebridge Brewery by about a month.
Sedition owners Aaron and Kelly Lee ran Maison de Glace for four years in the same 1904 building on Laughlin Street just off Second in the heart of downtown. Sedition was staged to open as “Defiance” until Thanksgiving 2015, when the Lees decided to avoid a trademark brew-haha and changed the name. However, they kept the raised-fist logo, while painting over the word “Defiance” on the building exterior. But the Lees cleverly kept the “E” and “I” in place, as the letters hold the same positions in the word “Defiance.”
The Lees and brewmaster Kyle Rossman are looking to start serving lagers and a variety of other beers around March 1.
“It’s close, so close we can taste it,” Aaron said. Sedition will feature a seven-barrel brewhouse, with a 1,000-barrel a year capacity, to start.
Tarwater Tavern opens in White Salmon
Brewer Doug Ellensberger of Everybody’s Brewery poured the first beer (Local Logger lager) at White Salmon’s new night spot, Tarwater Tavern, with owner Nick Baldridge at the tavern’s soft opening on Jan. 16. Baldridge described it as an “urban art gallery meets speakeasy” that will emphasize late-night music and art events to go with its range of local ales, ciders and wines. Tarwater is located on Jewett Ave. across the street from Everybody’s. Hours are 5 p.m. to midnight Sunday through Thursday and 5 p.m. to 2 a.m. Friday and Saturday.
