Tortilleria LaCascada’s Enrique Ortega, left, and Manuel Rivas make corn tortillas on their im-ported machinery. The new busi-ness, at 1021 12th St. on the Heights, holds a grand opening celebration Sunday, 10 a.m. to 5 p.m., serving free tacos made on the premises. LaCascada makes flour and corn organic tortillas in the Nixtamal style, a process of grinding based on the Aztec method of grinding the corn or grain in volcanic stones. Ortega and his wife, Maria, and Marco Rivas, also own Gorge Taxi Service.
