SPRING GARLIC CHUTNEY

In a two-quart saucepan, melt the butter and add the olive oil. Add
the spring onions first, sauteeing until the edges are brown. Add the
garlic and all the spices next. Continue to saute on high heat until the
spices become aromatic. Add the sugar and golden raisins, and stir
until the sugar melts. Add the water, turn the heat to low, and simmer
for about 15 minutes. Remove from heat and add the vinegar. Allow to
cool for about 10 minutes, then blend in a blender until very smooth.
