CHERRY JUNIPER SAUCE

Ingredients

  • 2 cups pitted Gorge cherries
  • 1 shallot, sliced
  • 6 juniper berries
  • 5 allspice berries
  • 5 whole tellcherry black peppercorns
  • ¼ cup gin
  • 1 cup red wine, such as The Pines 1852 Vineyard and Winery BigRed
  • ½ cup sugar

Instructions

Bring everything to a boil, then turn down to simmer for about 10 minutes. Blend in blender. Drizzle over grilled lamb chops. A little goes a long way.
