Gorge Kitchen, a kombucha and baked goods café, is the new venture of two young entrepreneurs and will open in mid-December in the Diamond Building, a project profiled in the Oct. 3 edition.

Sara Evans and David Ashford will emphasize locally-sourced ingredients as they brew their own kombucha and bake their own gluten-free goods in the café, 11 Third St., in the newly-renovated building just north of Cascade.

Evans is a Nutritional Therapy Practitioner (NTP) and she will be designing and sourcing the menu items. “Gorge Kitchen’s concept is that we are a healthier alternative to classic favorites,” Ashford said.

Gorge Kitchen sits between two other tenants, Farmers Conservation Alliance and Knot Another Hat, which moved from the New Yasui Building on Oak St.
